A stew means so many things in India. Here we call it khichdi, daliya or sometimes we just confuse it with soups. But that was a long time ago. I know my food now and I am no more confused about what a stew is. So just for the sake of proudly displaying my knowledge, I am gonna come out say it out loud for all that a stew is a combination of solid food ingredients that have been cooked in liquid and served in the resultant gravy. Ingredients in a stew can include any combination of vegetables and may include meat, especially tougher meats suitable for slow-cooking, such as beef, pork, lamb, poultry, sausages, and seafood. (Yes, I took Google’s help for this precise definition).

So basically stew is nothing but a meal that has thin gravy with either vegetables or meat or even lentils as the main ingredient and it is made using the slow cooking method till the ingredients are slowly simmered in a flavorful liquid. My favorite stew happens to be the instant pot lentil stew recipe.

I like making my stew in an instant pot. An instant pot is nothing but a pressure cooker or a rice cooker. There are some meals that are better cooked using the slow cooking method and an Instant pot is perfect for that.

An Instant Pot is a multicooker that has tons of functions, including pressure cooking, slow cooking, rice cooking, steaming, warming and sautéing.

For me, it’s the bubbling of the stew. I love the moment when it starts to simmer and thicken because of the sound as well as the aroma. Now, usually it takes a few hours to make a stew. But if you are using an Instant Pot, then you can cut down that cooking time and make your stew in only a few minutes and now hours.

Coming back to my favorite lentil stew. This is a wholesome, one-pot meal in itself. All you need along with this stew is some bread or grilled cheese. This is a very fulfilling stew that is filled with fiber and protein. It is highly nutritious, budget friendly, you can easily find all the ingredients already at home and it is perfect to use leftover vegetables and lentils.

Some of my other favorite stew recipes are:

  • Instant pot chicken marinara recipe which is only a 3-ingredient recipe. If you like the tanginess of marinara sauce and the tenderness of slow cooked chicken, you should definitely try this recipe. All you need for this is chicken thighs, a jar of marinara sauce, and some other spices of your choice.
  • Instant pot teriyaki chicken will never disappoint you. If you love teriyaki and want to indulge it in a hearty meal, you should go for this recipe.
  • If you got just 30 minutes or less on your hands, you should make honey balsamic instant pot chicken. You need chicken legs for this and a simple honey balsamic sauce which you can make by yourself.
