How to make bharta in different ways?

The moment we hear bharta we think of baingan bharta. I remember as a kid, my mother would always make baingan bharta during the winters. Basically for almost four months, I would demand that she would make it every weekend. Along with bharta we would have bhajra ki roti which was lathered with ghee and a big slice of mango pickle on the side was the perfect touch. And to end this meal on the right note, I would have a big glass of buttermilk which was seasoned with a pinch of salt and pudina powder.

Baingan bharta is a North Indian recipe that is made by roasting eggplant on coal or even gas. You roast it nicely till is become a little mushy. Once it cools down you have to peel it off, mash it and make the sabzi. Now this is a north Indian style bharta. Do you know that bharta and bhorta are kind of different. There is not much of a difference in the recipe but it is more of a cultural difference. My point is..that there are different kinds of bharta that you can make and they are all taste fantastic.

What is a bhorta?

Bhorta or bhurta is nothing but the same as bharta. It is a recipe made by mashing vegetables. You can do it with a lot of things and not just baingan. Although that was the first one that I ever tried. In fact, you can also use meat for bhorta. You can also use eggs to make bhorta. It’s not only the vegetables of your choice of meat that makes the difference. The masalas and the cooking process also makes a significant difference in your bharta.

Here are the different types of bhartas that you can make

  1. Kolkata style chicken bharta

Kolkata style chicken bharta is also known as murg bharta sepcial. This is an an earthy delicacy. All you need to do is cook the boneless chicken chunks cooked with you choice of Indian spices and add some eggs. The gravy is thick and make sure to top it off with kasuri methi, garam masala, and a bit of tandoori masala. You can use boneless chicken chunks or you can use chicken strips, OR even better….you can make a combination of both.

2. Tomato bharta

Get some big, ripe, juicy tomatoes. Wash it, mash it, cook it and bam!! There is your tomato bharta. And honestly, it is actually this easy. 2 rhymes and a couple of minutes of cooking is all it takes to make a perfect tomato bharta. If you like the tangy flavour of the tomatoes, you are definitely going to love this tomato bharta. I would recommend that you should also add fish to this recipe and make sure to use mustard oil.

3. Aloo bharta

Aloo bharta is the easiest kind of bharta that you can make. You just have to mash your potatoes and cook it well with all your masalas. You can also choose to add some chicken chunks if you like it.
