Let’s make palak better, shall we?
I personally love green, leafy vegetables. But I have had a hard time accepting palak. I have not really been a fan of spinach since I was a kid and most of my adulthood. To be honest, I don’t like it all that much either. But…hear me out! But, I have discovered some recipes, some cooking styles that make me like spinach. So if cooked appropriate, I love spinach. If I am unable to make a full blast recipe with palak as my main ingredient, then I mostly add it to my pastas, dal, or sabzis.

Mathia or muthiya is a Gujarati dish which can be had a snack or added to undhiya. The name muthiya is derived from the way it is made. It’s made with chickpea flour, methi, salt, turmeric, chili powder, and an optional bonding agent/sweetener such as sugar and oil and then grappled together in a fist. Hence, muthiya which also means fist. It is a vegan dish and a healthy food as you can either steam it or fry. If you add palak to the batter, you have got yourself palak muthiya. Similarly, you can also make it with dudhi.
2. Spinach stuffed chicken
This will definitely make you fall in love with spinach. This recipe is a very wholesome and filling way to use spinach as one of the main ingredients. You need to use chicken breasts for this recipe. Slit in the centre to create a pocket and stuff it bacon and spinach. You can saute the spinach before using it as stuffing. Grease the chicken with butter or any marination, add salt and pepper and grill it or bake it or cook it in a skillet. You can have a salad on the side to go with.
3. Mushroom spinach egg
If you want to quickly combine all your macro nutrients when you are in a rush you should make this recipe. All you need to do it just grease your pan, put the whisked eggs in it, add spinach and mushroom on top. Add chilies, salt, and pepper on top. You can cook the other side too. Serve it with some bread or have it as it is. It’s the perfect breakfast that you can have.
Some other Indian recipes that you can try with spinach are palak paratha, palak paneer, masoor palak. Basically, you can add palak to almost anything. You can make a very creamy and healthy spinach soup. You can even make a green drink using spinach and tomatoes. Now the key to make it test better is to some good spices, ginger, and lemon.
