It’s now two summers in a row that we have spent in voluntary house arrest because of the ongoing pandemic. The previous summer it was the Dalgona coffee, so let’s make this summer less caffeinated and more fruitful with some delicious pineapple desserts.

Pineapple is a tropical fruit that screams summer. The thorny crown might not look pleasant to some, but its insides are juicy and will be loved by all. Especially when you manifest some of the best desserts out of it. Here are the top 3 pineapple desserts that you must try and make the summers agreeable and better.

  1. Pineapple and musk melon sorbet

Sorbet is something similar or more likely to be a substitute for ice cream. It’s a frozen dessert that has fruits as its main ingredient, any fruit. To make a pineapple and musk melon sorbet all you need are the two fruits, any kind of sweetener, and lemon juice. Make sure that you are careful with the amount of sweetener that you add since fruits are already sweet in nature. You can use any fruit other than pineapple or musk melon. The best ones would be berries, watermelon, and mangoes.

2. Eggless pineapple cake

Fruit cakes have a reputation for being so juicy and yet so creamy at the same time. And if you are using fruit like a pineapple, it only makes it better. Making an eggless pineapple cake involves almost the same ingredients as you need to make a chocolate cake. The only thing different with making a fruit cake is that you have to make a compote. You can do that by simply using three ingredients including fruit, water, and sugar. You can make a compote by chopping your fruit into small pieces and cooking it with water and any sugar of your choice on a low flame till the sugar in the fruit breaks down. You’ll know your compote is ready when it starts getting a thick jam-like consistency. If you like eggs, here is the recipe with egg — https://bakewithshivesh.com/upside-down-pineapple-cake/

3. Eggless upside-down pineapple cake

An eggless upside-down cake is not very different from a normal cake, but it sure is more experimental and fun to bake. You can use yogurt as an egg substitute for this recipe. You can make it with as many variations as you like. To top off the final layer of your eggless upside-down pineapple cake, you can add berries, a pinch of cinnamon on top of the pineapple slices, or a thick layer of whipped cream. If you are baking this cake in a microwave, make sure to reduce your baking time by 25%. And since it is an upside-down cake, do not forget to palace your pineapple slices first in the baking oven before you pour your batter.

Fruit desserts fit and uplift any occasion. And hence, these pineapple desserts are definitely going to show you a good time. They are quick to make and even quicker to finish because that’s how irresistibly delicious these are! Don’t shy away from experimenting with various fruits of your choice.
